9. what is spoilage?
During the summer food poisoning season, you may hear things like, "I forgot to put the leftovers in the refrigerator and they have gone spoilage. What does this spoilage mean?
Generally, spoilage is a phenomenon in which organic matter, such as food, is transformed by the action of microorganisms. If spoilage is a phenomenon caused by microorganisms, it means that to prevent spoilage, we should create an environment where it is difficult for microorganisms to multiply. Spoilage has been a well-known phenomenon since ancient times, but since there was no cold chain in the past, various preservation methods have been devised. This has been passed down to us since ancient times in the form of preserved foods.
For example:
- Increase osmotic pressure (e.g. salted foods)
- Decrease water content (e.g., dried foods)
- Adjust pH (e.g. pickles)
- Add alcohol (e.g., fruit wine).
In addition to these, more modern methods include keeping the temperature low and using preservatives.
